So much has happened in the last few weeks, some of it seems like a blur, really. Lots of business travel, my dad came for a visit, I’ve been busy writing for the HoustonPress blog, work stuff and more work stuff, The Hubbz and I celebrated our 2nd anniversary…, a month later. Better late than never, right? We went on vacation, I got sick and had a surgery scare, the list goes on and on. At the end of the day, I’m just trying to say I’ve been gone far too long. Let me catch you up on some of the goings on.

Dodo threatened me if I didn’t get our wedding cake topper out of her freezer. She had wrapped it for us right after our wedding party. I think she used about 4 rolls of plastic and foil wrap. Sorry, Mother Earth, but that’s the first secret: wrap it to death!

Second secret, thaw it slowly in the fridge, but don’t unwrap it. This one sat in the fridge for a week. Finally, when you’re ready to serve it, unwrap that baby! Listo!

On the day

I promise, it was as good 2 years later as it was the day of.

Ta da!

We had a few friends over, had some wine, bubbly and munchies, some of which I’ll document on a separate post. Yes, some. There’s a story there.

I also made a fruit salad for the health-conscious ones and also because it was hot outside. VERY hot. It is still very FRIKIN hot here. So, fruit salad for you.

There’s no need for a recipe here, mango, pineapple and peach are in full force right now. I also added pieces of jicama, not much, just enough to add a bit of crunch and an element that was not as sweet as the fruit and allow them to be the stars of the show. The fruit was so sweet, there was no need to add sugar, but I did add a bit of Licor 43, which is a Spanish liqueur made with 43 ingredients-including citrus and vanilla.

A bit of mint to add some freshness and its done! It was really sweet and fresh and luscious. It was divine, go make it before the mangoes are all gone!

Look at those cute kids, aren’t they just sweet?

Well, it’s about time I found your site again. I missed following all your cooking. Plus, I had to comment since you gave me credit for the wrapping of the cake! Yes, it wasn’t eco-friendly to wrap it with foil, then plastic wrap, then foil, then plastic wrap…but the results were great. I was a bit nervous, but it WAS as moist as the day of your wedding celebration. Belated congrats on your new site.
